Slow Roasted Pork, Mexican Style
There's a reason this dinner is on the menu. Mostly because I like to eat it. Regularly. Delivered to your home frozen, it's also a great freezer stocker for the days you're up against it. It's also one of those flexible dinners you can serve in a variety of ways.
It's delicious rolled up in a tortilla; pile it onto a baked potato, serve it with rice and veg or salad... the list goes on. Pork, slow roasted with a bunch of spices (mild chilli) and apple juice until it sort of shreds into delicious strands. The shredded pork is added to quickly cooked onion, red capsicum, tomatoes, and black beans.
