Roast Vegetable Frittata (Frozen)
Frittata is a bit like quiche, but without the calorie laden pastry. I've had a few requests for this dinner and so I offer it again.
This vegetarian version combines sliced, roasted vegetables (potato, sweet potato, pumpkin) layered with onion, capsicum and fresh parsley.The layers are miraculously held together with eggs, a tiny bit of milk and grated tasty cheese. The Spanish know how to eat, and we like to eat like them!
This meal will come to you cooked and ready to heat up in a moderate oven. It freezes well and has even passed the ultimate dinner test: frittata in oven, go out, set oven auto on/auto off, cross fingers, bring home tired, hungry children, retrieve delicious, hot dinner from oven, children quiet (ahh).
Delicious with a salad and some crusty bread.
