Roast Vegetable Frittata
Frittata is a bit like quiche, but without the calorie laden pastry. This vegetarian version combines sliced, roasted vegetables (potato, sweet potato, pumpkin) layered with onion, capsicum and fresh parsley. The layers are miraculously held together with eggs, a tiny bit of milk and grated tasty cheese. The Spanish know how to eat, and we like to eat like them!
