Pulled pork, for the uninitiated, is spiced pork (just a hint of chilli) slow roasted until it falls apart into delicious strands. When the junior recipe testers were very little, and there was only two of them, the youngest was once heard instructing her older brother to eat the meat on his plate. Why? Because it's nice and soft.

This has become part of our family vernacular, but let's face it: it's not the way you necessarily want your meals described, until you reach a certain age. At that time you want your meat soft, and your teeth in a jar beside the bed.

This works really well piled into a burger with crunchy coleslaw, or into a taco shell with grated cheese, sliced tomato and lettuce. Put it in a wrap with cheese and salsa, and whack it into the sandwich press for the most delicious (and fast!) quesadilla.

Ingredients: Salad: Cabbage, fennel, rocket, apple, spring onion. Dressing: Wholegrain mustard, olive oil, balsamic vinegar.

Heating instructions

Defrost overnight in the fridge & microwave until piping hot. Or, reheat, covered with foil, in a moderate oven until hot.
