Roast Pumpkin, Caramelised Onion and Feta Filo Pies (Frozen)
This pie is a version of one my mum made for us one mother's day. My mum cooking for me on mother's day is wrong on so many levels, I know. But the wrong was not with the pie.
Roasted pumpkin and garlic, caramelised onion, a sprinkling of rosemary and feta all wrapped up in filo. If that isn't enough to make you want to eat it, here's another thing: it cooks quickly, it's lighter than its shortcrust cousins, and it will make you happy eaten cold at a picnic, outdoorsy type affair ideal for these delightful sunshine-y weekends we've been having lately, or hot on your dinner plate on the table or in front of the telly.
AND it's a good thing to stock your freezer with for the days when you can think of anything else you'd rather do than rush home to cook dinner. Need I say more? One large size to feed the large crowd at your place, or the small crowd (with lunch sorted for the next day!)
