Potato and Leek Soup
A winter classic. Great for a quick dinner, or a warming lunch. And although it looked like we were going to skip winter altogether this year, we haven't quite and so we can eat soup! The small size makes a terrific lunch-to-take-to-work, I-don't-have-time-to-make-a-sandwich option (and in truth, you may well squeeze two lunches out of it).
Loaded with veggies and the stock is homemade. Vegetarian and gluten free... what more needs to be said?
