Lamb, Sundried Tomato & Feta Meatballs (Frozen)
Like their porky cousins, these meatballs are delicious. We mix them and roll them for you, oven bake them and all you have to do is reheat them. Or not. They're also delicious cold, and work very well as a frozen standby for those particularly treacherous days when, by the end of breakfast, you are wondering how you're going to get dinner sorted.
But here's the other thing: we have had the odd request for dinners that are good for preschooler type people who want to hold dinner in their hands, or for teenage type people who want to eat the entire pantry immediately after school. It seems to us, that these meatballs could be just that. They're full of things you want to put into your children, like free range lamb, locally sourced cheese, sundried tomatoes and fresh herbs. And we're confident you'll love them too.
Heat the meatballs in the oven or microwave, serve with your dipping sauce of choice, bread for the carb-lovers and salad. Dinner done and the BBQ plate doesn't need a scrub down afterwards.
