Coriander Chicken with Cherry Tomatoes, Garlic & Thyme (Frozen)
This dinner became a firm family favourite quite a few years ago. It then became the dinner we served to all manner of friends and relatives who came to eat with us. In the more recent past we ate it with the Dinner on the Table team when they came over to herald in the New Year. They all ate with gusto.
First we coat chicken marylands in a delicious mix of crushed coriander seeds, salt and pepper. This is left to marinate before being roasted with cherry tomatoes, garlic cloves and thyme.
It comes to you ready for heating in the oven. Cover with foil and heat in a moderate oven for around 30 mins or until hot. If you freeze it, heat straight from frozen in around 55 minutes.
