Slow Roasted Pork, Mexican Style (Frozen)
There's a reason this dinner is on the menu this week. Mostly because I'd really like to eat it. It's also a great freezer stocker for the days you're up against it. It's also one of those flexible dinners you can serve in a variety of ways.
It's delicious rolled up in a tortilla; pile it onto a baked potato, serve it with rice and veg or salad... the list goes on. Pork, slow roasted with a bunch of spices (mild chilli) and apple juice until it sort of shreds into delicious strands. The shredded pork is added to quickly cooked onion, red capsicum, tomatoes, and black beans.
Gluten free. Suitable for a low sodium version
